Melbourne University Press 2006 ( In Reserve) . But your research should obviously go beyond this text. You might like to think, for example, of what exactly is meant by a ‘cuisine’ in the first place? How is a ‘cuisine’ different to a particular food item? (Readings in Week 5 support this topic although we have not had a direct lecture on it).
